Pulled Pork Sandwiches

3 1/2 lb. boneless shoulder pork. 1 large onion (chopped)
1 jar apricot jam. 2 oz.dried apricots (chopped)
7 fl.oz. bbq sauce. 8 baps.

Pre heat slow cooker, In a bowl, combine all except pork. Place pork into slow cooker, cover with the mix. cook on low for 8 hours.
Take Pork onto a chopping board, (I use a Grill Pan, and take off the skin and fat at this point) and gently shred (Pull), using 2 large forks.
In a large bowl combine the pork and some of the sauce.
Then serve the pork in the baps with some more of the sauce on top. Serves 8 with a side dish of coleslaw.

(I serve this with chips and coleslaw).
