kims apple and plum pud recipe

115g unsalted butter, very soft
175g caster sugar,golden if you have it in .
1 medium free range egg,beaten
150g plain flour
1 teaspoon baking powder
a pinch of salt
1 teaspoon of ground ginger..or cinnamon or nutmeg (i used ginger)
100g pecans or chopped walnuts ( i used walnuts)
4 tart eating apples ( i used braeburns)
4 or 5 plums
 
 
instructions
Peel and core apples and chop to 1cm pieces
Chop and stone plums
 
Turn oven onto 180c/ gas 4/ 350f
 
Put butter into bowl and beat til very creamy ,then add sugar . beat til light and fluffy and pale in colour,then gradually add the beaten egg.
Sift the flour ,baking powder, salt and spice together into the bowl and fold in or mix on slow speed.
When mixed through add the fruit and nuts into bowl and mix in .
Spoon the mix into a prepared loose bottomed tin ,spread evenly and then bake in oven for 30 to 40 minutes til its golden brown and sponge on top springs back when pressed lightly.
Enjoy with custard or cream or ice cream.
