Roasted Butternut Squash and Red Pepper Soup.

I was gobsmacked how gorgeous this is. Mr Green

1 Butternut squash
2 Red Peppers
Chicken or Vegetable stock
Garlic clove.

Peel and deseed the squash and cut into chunks.
Cut the peppers in half, deseed and cut roughly into chunks.

Put the squash on a tray, sprinkle with a few chilli flakes (optional) spray with frylight (or drizzle with oil) and roast for 15 mins.
Add the peppers and roast for a further 15 mins.

Spray a saute pan with frylight and add 1 or 2 crushed garlic cloves. Add the roasted veg and add enough stock to cover the veg.

Bring to the boil and simmer for 15 minutes and then blitz until smooth.

often the simple dishes are the best .
it sounds yummy and i have a butternut squash and some red peppers in my veg bag so i think i will do this after visitors gone on sunday ,ready to eat on monday

Kim's right, Lorraine: simple is often best. The soups I make are basically sauteed onion plus stock plus main ingredient(s). Cauliflower and broccoli are good and you can use up all the stalks that way.

One of my faves this, and if you do the squash with onions and some curry powder thats good too. Soup that is.

Well I can tell you, it is certainly the most scrummy squash soup I have ever made. The ladies at the allotment society always leave me a bagful of various squashes now and again so I am used to making it, but this recipe of Lorraine's tops them all. I am so pleased with the bit I have tasted that I have packaged the rest to go in the freezer and will stun my baby bruv with it when he's here in a couple of weeks' time. Thanks Lorraine!!

MM I made it too, very yummy. I made a red pepper and tomato one too this week. Do you want that recipe, its very easy and delish.
